Chef Cesarini graduated from the prestigious Italian College for Culinary Arts in Stresa, Italy, and has travelled across the globe to gather experience and awards, including during his formative years in New York where he won an award at the International Salon Culinaire of Food and Beverage.
Chef Cesarini honed
Before his tenure at Sheraton Grande Sukhumvit, Chef Cesarini honed his skills in Shanghai and the Maldives. He is highly accomplished in contemporary cooking techniques while sticking to his roots and the fl avours of Italy’s regional cuisine. His latest appearance on Iron Chef Thailand saw him emerge as a winner with his foie gras dishes. Guests can indulge in his winning recipes such as pan-roasted foie gras with pumpkin foam, sprouts, amaretti and balsamic reduction; foie gras soft potato gnocchi with chanterelle mushroom sugo and black truffle; and breast of free range duck with burrata, grape compote and roasted roots. For dessert, chocolate foie gras mousse with foie gras ice cream and fi g brûlée is not to be missed.
